About Butyric Acid
Butyric acid (butanoic acid) is a shortchain fatty acid with the formula C4H8O2. It is a colorless to yellowish oily liquid with a strong, rancid butterlike odor. Butyric acid is used in the manufacture of flavoring esters, pharmaceuticals, and plastics such as cellulose butyrate. It is miscible with water, ethanol, and ether, and has a boiling point around 163164 C. In food chemistry, it contributes to cheese ripening and characteristic pungent notes.
